Founded in El Paso in 1958 by Jesse Arrambide Jr., Pancho’s Mexican Buffet became a familiar name across Texas and the Southwest. The chain was known for affordable, all-you-can-eat Tex-Mex meals, including enchiladas, tacos, tamales, and sopapillas served with honey. Customers could raise a small flag at their table to request additional servings, a tradition many former customers still remember.
At its height, Pancho’s operated dozens of restaurants, including one on Grande Bulevar in Irving. Historical directories place the restaurant there by 1982. Although the chain eventually contracted, the Irving property continued to serve different purposes over the following decades.

The earliest selected Street View image shows Pancho’s still occupying the property, with its distinctive green sign, brick exterior, and covered dining area. The restaurant had been part of the area for at least 25 years.
January 2013 — Mariscos 2000

By January 2013, Mariscos 2000 had taken over the former Pancho’s location. The seafood restaurant introduced blue-and-white exterior colors, new signage, and a redesigned appearance while retaining the recognizable building shape.
April 2019 — Kudo Care
The property underwent extensive reconstruction by April 2017, replacing the former restaurant appearance with a modern commercial design. By April 2019, Kudo Care was operating at the site, offering medical, dental, and vision services.
